- SFORMATO DI RIGATONI CON FIORI DI ZUCCA E ALICI
Ingredienti:
Rigatoni 320g
Alici
Crescenza 100g
Fiori di zucchina
Besciamella 300ml
Aglio n.1 spicchio
Limone
Prezzemolo
Olio extra vergine di oliva

Preparazione:
Pulire i fiori di zucchina, privarli del loro pistillo ed inciderli per aprirli. Spennellare con dell’olio uno stampo (30 cm) e foderarlo con della carta da forno unta con l’olio. Infine adagiare i fiori in modo che coprano l’intera superficie.
Cuocere i Rigatoni in abbondante acqua salata per 10 minuti. Nel frattempo, pulire le alici e metterle a cuocere per pochi secondi, dalla parte della pelle, in una padella con un filo d’olio e l’aglio. Poi versarle in una ciotola col resto degli ingredienti e frullare col minipimer per ottenere una crema omogenea.
Scolare i rigatoni, condirli con olio extra vergine di oliva, poi comporre lo sformato aggiungendo qualche cucchiaio di crema tra uno strato e l’altro. Infine coprire con altri fiori di zucca. Terminare la cottura in forno a 180 gradi per 15/20 minuti.
Capovolgere lo sformato su un piatto da portata, decorando con qualche foglia di prezzemolo.
