The Chickpeas flour has worked fully in the Company, from sowing to threshing and finally handcrafted with our mill burrs enterprise Stone.

Panelle of Chickpeas Palermitana
For about 15-20 fritters, 200g chickpea flour, water, parsley, olive oil, salt.
Dilute the chickpeas flour in a pint of warm water with a tablespoon of salt to put it to cook for a few minutes over low heat until a thickish batter. Pour batter in a baking dish or a greased pan with the oil, until obtaining a thickness of about 1-2 centimeters. Cover with a sheet of parchment paper and let it cool down. Cut the batter squares of medium size and fry in a pan in hot oil. Better if served hot.
Chickpea Flour Blacks
The chickpeas blacks , such as municipalities chickpeas , which are composed of 10% water, 19% protein and 17% from dietary fiber. They have a great energy value , and a high protein content. The number of fibers present help bowel regularity and make it a light food and easy to digest, good for those who want to control your weight and your fitness.
The fritters can also be consumed in the bread with a pinch of lemon juice or as crunchy snacks instead of chips and pretzels during a cocktail.
