At Bioland, our organic spelt is grown in-house and stone-ground with care, ensuring a 100% closed and certified organic supply chain. Our Closed Organic Supply Chain

Bioland follows a fully closed supply chain: we grow, harvest, and stone-mill all our organic ancient grains within our certified farm in Gravina in Puglia. From field to flour, every step is handled with traceable organic practices.

Stone-Ground Organic Spelt Flours

Our spelt flours are slowly and gently milled with natural stone millstones, preserving flavor and nutrients. They do not have the typical strong aftertaste found in other whole flours, making them more enjoyable and easier to digest.

Spelt and our supply chain closed

Farro or Spelt was the " Roman army food ", not surprisingly his word derives from the Latin "far" then "flour." The three varieties of Organic Spelt is grown in farm , then turned into flour in our mill with millstones with strictly organic methods. The whole organic spelt flour unlike other flours, does not have the typical taste, it is highly digestible and is a viable alternative for those who follow a light diet.

, and we quantitivi the formula "freshly ground" .
The flours hulled wheat Spelta and Spelt monococcum (einkorn or) listed above may be provided integrals and type "2" (whole seeds).
The flour Spelt Dicoccum available are Durum (pasta only), wholemeal re-milled flour andtype "2" (semi-integral for bread, pizza and focaccia).
The three varieties of barley can also be divided as follows:
- Small spelt, or monococcum (or einkorn);
- Middle spelt, or Dicoccum;
- Large spelt or Spelta.
